Picked by the Kurup and Menon families from vines grown on laterite soil. Berries are sorted the same day and moved to raised mats for drying.

The grind gives a warm heat and a clean finish in rasam and pepper broth. Works best freshly cracked; holds aroma in slow cooks.

Kalpetta pepper from laterite slopes brings a steady heat that does not mask ginger, garlic, or curry leaves. We keep stones and stems out with a second clean in Kochi.

For broths and rasam, crack just before cooking. For grills, toast lightly and grind coarse to keep the aroma bright.

Harvested near Cheruthoni by the Mathew and Varughese families. Pods are low-heat dried in baskets for a tight green shell and high oil.

Crack lightly for chai, payasam, and halwa. Keeps its sweet-green profile even in long simmering.

Idukki cardamom keeps its oil even after long simmering. Pods stay tight; split the shell and bruise the seeds for tea or desserts.

We avoid smoke-drying. Gentle basket drying preserves the sweet-green note chefs ask for in Thiruvananthapuram.
